The Spanish love it with Manchego, which is a cheese made from sheep's milk (don’t judge). Quince paste really helps to “cut” through the richness of the cheese, balancing flavours. Another common usage is an accompaniment for charcuterie, heck if you’re feeling really adventurous why not coat it with vanilla chocolate and create some truly amazing confectionary.
