An ingredient whose merits are yet to be fully appreciated by many outside the Far East. In contrast to traditional European wine vinegars, rice vinegar has a very mild flavour and none of the sharp acidity of its western counterparts. Used in conjunction with Mirin seasoning, for example, rice vinegar can form the base for any number of dressings or dips where the intention is to create a light, subtle accompaniment to the principal ingredient. Also, use instead of white wine vinegar in the making of sauces or soups where the requirement is for just a suggestion of sourness and acidity.
