Isomalt is a sugar for use in food moulds and decorations, with the ability to withstand high temperatures without altering texture or taste. The sugar can be used to create transparent moulds and shapes ideal for showpiece decorations for baked products such as cakes and pastries.
How to use:
Heat the isomalt in a stainless steel pan on high until all the powder has “melted”, once this has been achieved remove from the heat until the bubbles have disappeared. The syrup is then ready to be poured into the required mould.
The solution can be reheated without loss of texture; however do not overheat the solution as this will lead to the finished decorations becoming brittle.
TIP: Add food colouring to create coloured moulds
