A natural thickener derived from the fermentation of glucose or sucrose. Xanthan Gum’s main property is to increase the thickness of liquids (hence it being a thickener!).
Xanthan gum really can be used in anything: it dissolves easily in all liquids, hot or cold, sustaining stability under a range of temperatures and pH levels. Commonly used in sauces and dressings, it is also used to improve the thickness of fat-reduced recipes such as no-ice cream milkshakes.
Tip: The viscosity of xanthan gum solutions decrease during mixing, only returning to its original balance when left to rest.
