Black garlic bulbs are ‘blackened’ by extended ageing under controlled temperature and humidity. This produces an end product with an incredible depth of savoury/umami flavour with a molasses like sweetness and notes of balsamic/tamarind acidity.
For convenience we have blended down the black garlic bulbs to make a paste that can be added to all manner of sauces, soups and dressings.
